Bettina Campolucci Bordi headlines at The Good Life Show
The dynamic UK based Chef Bettina Campolucci Bordi is a celebrated plant-based chef and wellness advocate, and will showcase her innovative, zero-waste, and sustainable approach to cooking at the Good Life Show at the Cape Town International Convention Centre (CTICC) from 30 May to 1 June 2025.
With roots in Denmark, Tanzania, and Sweden, Bettina brings a global flair to her plant-based dishes, blending bold spices from Africa, the simplicity of Scandinavian cuisine, and hearty Danish home-cooked meals. Her journey into plant-based cooking began as a personal health choice, and this then developed into a genuine passion for sustainability and reducing food waste. She has a massive international following, and will be sharing her passion for inspiring people to experiment with unique and diverse ingredients to create delicious dishes.

Sweet Quinoa
(Makes 2 portions)
Ingredients
1 pear
1 apple
1 orange, peeled
130g (4 1/2 oz/1 cup) precooked quinoa (any color)
Juice of 1/2 orange
Juice of 1/2 lemon
1 tablespoon raisins
1 tablespoon chopped almonds
1 teaspoon ground cinnamon
1 teaspoon cardamom
1 pinch of ground cloves
Plant yogurt, mint leaves,
or seasonal fruits, to serve

Method
Chop the apple, pear, and orange into small squares (smaller than bite-size) and put them in a bowl.
Add all the remaining ingredients and give it a good stir.
Enjoy with a dollop of plant yogurt, a few mint leaves, or a sprinkling of seasonal fruits.
Chickpea Omelette
(Makes 1 large omelette, enough for 2 portions)
For the Filling
2 tablespoons olive oil
2 garlic cloves, chopped
1/4 head of Chinese leaves (stem lettuce), thinly sliced
1 carrot, grated
1 tablespoon medium-heat tamari
1 tablespoon sesame seeds
1 teaspoon sesame oil
1 spring onion (scallion), green and all, thinly sliced
For the Omelette
60g (3 oz/½ cup) chickpea (gram) flour
½ teaspoon bicarbonate of soda (baking soda)
1 teaspoon apple cider vinegar
125ml (4 fl oz/½ cup) water
For the Topping
Chilli sauce or sriracha (optional)

Method
Heat the olive oil in a pan, add the garlic, cabbage, and carrots, and fry for 5–10 minutes until soft and golden.
Add the tamari, sesame seeds, and sesame oil, then turn off the heat and leave aside.
In a mixing bowl, whisk the omelette ingredients until smooth, then let it stand for 5 minutes.
Heat a non-stick pan, pour in the batter, and sprinkle sesame seeds on top. Cook for a few minutes until air bubbles appear, then flip to the other side and cook until set.
Transfer the omelette to a plate, fill it with the cabbage mixture and some spring onions, then fold over the edges.
Optional: Drizzle with chilli sauce or sriracha for extra heat.
